Quick & Easy Breakfast Oatmeal

I'm really bad at eating breakfast. It's just not something that I have ever gained a habit for. Over the last few years, as I have further developed my cooking skills, and gained an increase interest in my foods impact on my health I have tried to build the habit of eating breakfast daily.

This last week, I made a really great step in the right direction. I ate breakfast everyday for 8 days! I'm hopeful that I can continue to build momentum and eat breakfast everyday. I've noticed that my mood is more level and positive throughout the day, and that I am more likely to continue to make healthier food choices throughout the day if I eat a good breakfast. 

I usually get bored eating the same thing everyday, but this breakfast oatmeal is so easy to change based on what you're feeling, or have available that I haven't yet found myself searching for something else for breakfast yet! I've been loving almond butter and fresh strawberries on top... partly because it tastes great and partly because its what we have in the fridge. 

Over the last 8 days I've eaten a variation of this breakfast oatmeal every morning. It is filling, delicious, and good for you as well! I have no shame in using my microwave to get this together in less than 10 minutes every morning. Two mornings this week I had to be at work early, and so I just made it up in a little jar and brought it with me, heating it up in the microwave at work. I love how easy it is for this breakfast oatmeal to come together.

Breakfast Oatmeal
Quick, easy & totally plant based Breakfast Oatmeal. Super easy to adapt to your personal tastes.
  • 1/2 medium banana
  • 1/4 cup oats
  • 1/4 teaspoon cinnamon
  • 1/2 tablespoon chia seeds
  • 1/2 tablespoon hemp hearts
  • 1 teaspoon vanilla
  • 1/4 cup cashew milk
  • 1/4 cup fruit (fresh or frozen)
  • 1/2 tablespoon almond butter
  • chopped almonds
  • chocolate chips
1. Mash banana2. Add oats, cinnamon, chia seeds, hemp hearts, vanilla, cashew milk, and frozen fruit if that's what you're using. 3. Mix together, microwave two minutes3. Top with fresh fruit, chopped almonds, almond butter, and any other toppings you love
